This is my second cake recipe. According to my knowledge I got good experience in making of egg less sponge cake. Actually I like to eat cake but I don't prefer to eat due to high calorie. I wanted to make healthy cake. Then Normal sponge cake is changed into healthy cake with some modifications. Here, I use Multi grain flour(Wheat,Jowar,Ragi,Soya) Instead of all purpose flour (Maida). Maida is processed flour it doesn't have any nutritional values. It is good to use in small quantities in making recipes. Here I decorate the cake in Mobile phone shape. Actually my husband likes gadgets very much that is why I got this idea.
Multi grain flour (MGF) - 1 1/4cup
All purpose flour (APF) -1/4 cup
Fresh Yogurt - 1 cup
Sugar - 3/4 cup
Baking Soda (BS) - 1/2 tsp
Baking powder (BP) - 1 1/4 tsp
Vegetable oil (Refined oil) - 1/ 2 cup
Vanilla essence - 1 tsp
Coco powder - 3 tbsp
Dry fruits-1/4 cup (optional)
- Preheat the oven for 10 minutes.
- Cream the sugar and yogurt till the sugar melts.
- Add BP and BS. Mix well and keep aside for 3 to 5minutes till the bubbles appear.
- Add the vegetable oil and essence. Mix well.
- Add the sieved APF+MGF and mix well but slowly and little at a time ( 2 tbsp at a time)
- Separate the batter in to two equal portions. Add coco powder to one portion and mix well.
- Keep the second portion as it is.
- Grease the pan with ghee and dusting with flour slightly.
- First transfer coco powder mix batter into the greased pan. Slowly pat the pan on the floor to remove any air.
- Now put dry fruits over the batter as a layer and pour the plain batter over the coco batter.
- Very slowly pat the pan on the floor to remove any air.
- Bake it at 200 degree Centigrade for 10 minutes.
- Then reduce the temperature to 175 degree and bake for 20 - 25 minutes.
- Allow it to cool and turn it on the decorating plate after some time.
· pressure cooker method:
- This cake can also be made in pressure cooker.
- Here we can use aluminum bowl or other than stain less steel.
- Keep the empty bowl (any) in pressure cooker in invert position.
- Now put cake pan on it and close the lid without weight.
- Keep the flame on high for 5 mints, on medium for 7 mints and on low for 5 mints.
- In meanwhile we can check it once with toothpick. Depending upon quantity sometimes it takes more time to bake.
- Allow it to cool and turn it on the decorating plate after some time
- Enjoy yummy plain cum chocolate cake.
