Betel Leaf Fried Rice



I got this recipe from TV show. Taste is very different but good to eat. Betel leaf is very good for health. When consumed after meals it induces the salivary juices and peristaltic movements and helps in easy digestion.
 

Ingredients:

Betel leaves – 4  

Chopped coriander – ¼ cup  
Ginger garlic paste – 2 tsp  
Grated coconut – 1 tbsp  
Jeera – 2 tsp  
Cashew nuts – few  
Boiled Potato cubes – ¼ cup  
Ghee – 2 tbsp  
Lemon juice – 2 tsp  
Rice – 1 ½ cup  
Salt to taste

Method of preparation:


  1. Cook the rice in the cooker for 2 or 3 whistles, until it is done. Let it cool for some time.
  2. Take Betel leaves, Coriander leaves, grated coconut, salt, ginger garlic paste and cumin seeds. Grind them into fine paste. Keep the paste in a separate bowl.
  3. Heat ghee in pan add above betel leaves paste and saute until cooks well.
  4. Add potatoes cubes and saute for 2 minutes.
  5. Add cashew nuts and rice and mix well. Cover and cook until it gets good smell.
  6. Finally add lemon juice and salt according to taste.
  7. Serve it hot along with any Raitha.
