Sweet Corn Kheer




Sweet corn is one of the most popular vegetables. It is loved by adults and children alike because of its sweet flavor. This vegetable, although being sweet and delicious, is a great source or many vitamins and minerals. According to WHFoods.org, sweet corn is very rich in vitamin B1, vitamin B5, vitamin C, phosphorus, manganese, folate and dietary fiber. Because of the vitamins contained in sweet corn, many health benefits can be associated with the consumption of this delicious vegetable. A moderate consumption of sweet corn may help children with increasing brainpower and memory. Studies also suggest that despite the cooking process, sweet corn does not lose its antioxidant properties. In fact, cooking only releases the antioxidants that can fight the damage caused by free radicals.
Studies reveal that sweet corn may actually provide more nutrition than most vegetables and fruits. However, how you choose to consume sweet corn is important too. Most sweet corn recipes call for additional butter and salt. Therefore, while sweet corn is good for your heart, cooking it in fat may render its nutritional value void. Instead, try sweet corn recipes that call for grilled corn. Try boiled corn kernels in healthy salads or sauteed vegetables. You can also add boiled corn to your soup  for a rich, creamy flavor.


Here I am giving a  yummy and tasty recipe. Sweet Corn Kheer  is very healthy and easy to make. In this recipe i used custard powder for flavor only. You can also make it without custard powder for elders and health conscious people.  I hope you like it .....happy cooking.....



Ingredients:
Sweet Corn - 1 cup
Milk - 2 cups
Sugar - 1/2 cup
Ghee - 1 tbsp
Custard powder (optional) - 2 tsp
Cardamom powder - 2 tsp
dry fruits (optional)   finely chopped -  1 tbsp

Method of preparation:
  1. Crush the sweet corn in mixer without water. Put in bowl and keep it aside.
  2. Mix together the crushed sweet corn, milk and  in a broad non-stick pan and simmer on a flame, stirring continuously, for about 5 minutes.
  3. Add sugar, cardamom powder and ghee and mix well till the sugar has dissolved.
  4. Dilute the custard powder in cold milk and add to the above mixture stirring continuously until completely dissolved. 
  5. Add dry fruits and mix well. Garnish with boiled sweet corn.
  6. Remove the kheer from heat and serve either warm or chilled.
