Sweet Corn Chutney



Today I am giving to you a different recipe from sweet corn.This is sweet corn chutney. I got this from food magazine. It was good to taste along with any flavored rice. Actually I ate as it is without any rice. It was nice. In this I have used sweetcorn, carrot, onion and some spices.This is very healthy dish. I am giving some healthy information about sweet corn and carrots.

Sweet corn has vitamin B1, vitamin B5, vitamin C, folate, phosphorus, dietary fiber, and manganese.The significant amount of folate corn supplies helps in maintaining a good health for our heart.For these various reasons, the consumption of sweet corn is very necessary, as it has so many health benefits. It is a good idea to include sweet corn as a staple part of your diet to a considerable extent so as to maximize the benefits that you can glean from this rich food source. Beta carotene that gives the sweet corn its rich orange, red color may also avert signs of lung cancer and promote lung health. A moderate consumption of sweet corn may help children with increasing brainpower and memory. This is because thiamine (a component of Vitamin B) helps promote increased memory.Studies reveal that sweet corn may actually provide more nutrition than most vegetables and fruits. However, how you choose to consume sweet corn is important too. Most sweet corn recipes call for additional butter and salt. Therefore, while sweet corn is good for your heart, cooking it in fat may render its nutritional value void. 
Carrot is energizing and antiseptic.Eating carrots will encourage healthy skin, hair, bones, eyesight and will also cleanse the body.Another benefit of carrot is on people with heart problem. It is believed that carrot may reduce risk of heart disease and certain types of cancer.

Ingredients:
 
Sweet Corn - 1/2 cup
Carrot , finely chopped - 1(medium size)
Finely chopped onions - 2 tbsp
fennel seeds - 1/2 tsp
Shah jeera - 1/2 tsp
Jeera - 1 tsp
Cloves - 2
Cardamom- 1
Cinnamon powder - 1 pinch
Garlic pods - 2
Coriander leaves - few
oil - 2 tsp
Salt to taste

Method of preparation:
  1. Heat oil in pan add all above mentioned spices one by one and saute for a while.
  2. Add chopped onions and saute until it turns into soft .
  3. Add Carrot and mix well. Cover and Cook till carrot cooks soft .
  4. Add sweet corn and mix all ingredients well and saute for 2 minutes or until done.
  5. Finally add salt and Coriander leaves and mix well. Remove from heat and let it cool for some time.
  6. Now Grind the above sweet corn mixture into fine paste using mixer grinder.
  7. Yummy and tasty sweet corn chutney is ready to eat with any flavored rice.
