Carrot Kheer




 Today my recipe is Carrot Kheer.This is very healthy for kids for improving their eye sight and immunity also. It is very simple to make and tasty to eat. We all know about milk is complete food, here I used low fat milk but you can use cream milk for kids. It is very ideal for breakfast or snack time. In this recipe I used carrots, milk, honey and some dry fruits. Carrots contains large quantities of vitamin A, in the form of beta carotene. Carrots are also rich in Vitamin C, Vitamin K, and potassium.The health benefits of carrot include reduced cholesterol, prevention from heart attacks, warding off certain cancers. Most of the benefits of carrot can be attributed to its beta carotene and fiber content. Carrot is a good source of antioxidant agents. Carrots have antiseptic qualities and therefore, can be used as laxative, vermicide and as remedy for liver conditions.  Carrot juice improves stomach and gastrointestinal health. Ingredients:
Grated carrot - 1/2 cup
Low fat milk - 1 1/2 cup
Honey - 2 tsp
Cardamom powder -1/2 tsp
Nutmeg powder - 1/4 tsp
Dates,cut into small pieces - 6 to 8
Finely chopped dry fruits - 1 tbsp
Ghee - 2 tsp 

Method of preparation:
  1. Heat ghee in a pan, add  grated carrot and saute until it turns into soft.
  2. Add low fat milk and let it boil for 5 minutes and add cardamom powder and nutmeg powder and mix well.
  3. Finally add dates and dry fruits and mix well. Cook for 2 minutes.
  4. Remove from heat and mix honey according to your taste and mix well.
  5. Now yummy and healthy carrot kheer is ready to eat. Serve it hot or cold.
